warm weather inspires me to get really creative with my cooking. it forces me to use things in new ways that avoids the stovetop at all costs. so this weeks menu is a slow movement in that direction, not completely raw or grill only, but im getting there.
monday- spinach salad with mushrooms, tomatoes, sunflower seeds, and red onions. topped with my delicious homemade balsamic vinaigrette.
tuesday- baked potato bar. okay, oven necessary but sometimes i just dont have time.
wednesday- LOST and whole wheat ravioli with peas, artichoke hearts and a garlic lemon basil sauce. yum.
thursday- some variation of rice and beans. add some grilled plantains and a lime.
friday- orzo with spinach, sundried tomatoes and onions. grilled salmon.
saturday- free night. this includes; leftovers, eat out, whatev.
sunday- avacado club sandwiches.
