to the greek isles.

yesterday we ate more crayons. red, i believe. and then today we didnt do much. masa time in the am and then some seriously good sushi for lunch and then cuddle time and then jackson and i took a 2 hour nap. its all in a good rainy day i say. so after we woke up from our long nap it was, of course, dinner time and my publix trip was yet to be taken. so we went. in the rain.

but i must say that dinner ended up being delicious. we had greek veggie kabobs with a lemon-mint feta sauce and homemade hummus with grilled pitas. i have been forgetting to photograph my food lately but i will happily give you the recipe!

Greek Veggie Kabobs with Lemon Mint Feta Sauce

1 eggplant, cubed
2 zucchini, cubed
2 squash, cubed
1/2 red onion, wedged
1 red pepper, cut in to 1 inch chunks

skewer and either grill or roast them at 400 for 20-25 min. then drizzle with the sauce.

Lemon Mint Feta Sauce

juice of 2 lemons
2 garlic cloves
salt and pepper
2-3 tbsp olive oil
handful of mint, torn or shredded
2-3 oz feta 


seriously delish. and then i pulled out my always on hand canned chickpeas and made some hummus!

Yummy Hummus


1 can chickpeas (i dont drain mine because the extra liquid helps to make it really creamy!)
2 cloves garlic
juice of one lemon
salt and pepper
1 tsp red pepper flakes
1/4 cup tahini paste 
1/8 cup olive oil

throw it all in the food processor, and work until smooth and creamy!
grill some whole wheat pitas, dip and enjoy!
