a rainy day and some soup.

holy smokes its pouring outside. its been pouring since like 3am this morning. so jbear and i are playing trains, reading stories and watching ratatouille. really, whats better than that?


so, if you follow me on twitter, then you read about how i think i made one of the tastiest soups ever the other night. i adapted giada's soup, but changed it up a little. then served it with a melted mozzarella, avocado, bacon and tomato sandwich. it was so good. and jbear loved it too!


it looks so unappealing, but unlike everyone else in the blog world, nor myself or my husband are professional photographers. what a bummer, right? haha. anyways, it was delicious, and here is the recipe.



Garlic and White Bean Soup (adapted from Giada De Laurentiis)

3 cans cannellini beans (drained and rinsed)
4 cloves garlic
2 shallots
4 cups vegetable broth
2 tbsp white wine (whatever you have on hand)
1/2 cup half and half or heavy cream
small bunch of rosemary (like 10 little leaves)
salt and pepper to taste
1 tsbp butter
2 tbsp olive oil


this soup really is so basic and simple, but so good. first, chop garlic and shallots and sautee in butter and olive oil. season with salt. add drained and rinsed beans. let cook together for a couple minutes. add white wine. add vegetable broth. salt and pepper. now take either an emulsion blender (the handheld kind that i wish i had) and puree about half of the soup. OR put about half of the soup in a real blender. add back in to the pot. lastly, add your half and half and finely chopped fresh rosemary and let simmer. then eat!
