wednesday; what we baked


today, we are talking about banana bread.
about what to do with those over ripe bananas that have accumulated in your freezer.

okay.
this stuff is delicious.
and i dont want to toot my own horn, but ive had friends say its the best banana bread they've ever eaten.
yeah, thats right.
so in the middle of a long day with sick kids, i made 4 loaves and a batch of muffins.
why?
it was on my to do list.
go figure.


Banana Bread


6-8 very ripe bananas
1/2 cup butter
1/2 cup sunflower oil*
 1 1/2 cups sugar
3 eggs
1/2 tsp salt
1 tbsp vanilla
6 tbsp milk
2 tsp baking powder
2 tsp baking soda
3 cups whole wheat flour


preheat oven to 350. cream the sugar, butter and sunflower oil. mix in bananas and eggs. mix in the rest of the liquid ingredients. then fold in the salt, baking soda, baking powder and whole wheat flour. pour in to 3 buttered loaf pans ( i prefer the foil ones because i like the size). bake for about 40-45 minutes. 
then let cool a little, slice off a chunk with a pat of butter on it and seriously, so good.
*my moms original recipe calls for one cup of butter but i subbed half for sunflower oil and it tasted the same!

also, look for something exciting tomorrow! an actual project that i worked on with 1313 photography!
